Pumpkin Protein Pancakes

Serves: 1  Yield: About 3 small/medium pancakes or 2 large pancakes Protein: ~30g  Prep Time: 5 minutes  Cook Time: 10 minutes



Ingredients

⅓ cup pumpkin purée

2 eggs

1 cup oats

â…“ cup cottage cheese

1–2 tablespoons maple syrup (plus extra for drizzling)

1 teaspoon pumpkin spice


Directions

  1. Add all ingredients to a blender and blend until smooth. Let the batter sit for 2–3 minutes to thicken slightly.

  2. Heat a nonstick pan or griddle over medium heat and lightly grease with oil or butter.Pour batter into pancakes (2–3 small or 2 large). Cook for 2–3 minutes per side, until golden and set.

  3. Stack the pancakes and drizzle with maple syrup. Optional: top with Greek yogurt, chopped nuts, or a sprinkle of cinnamon.
